Abstract

Pineapple is considered as heavenly of fruits due to its high food values, glorious style, and unique flavor. An exploration laboratory experiment was conducted during July to December, 2023 on three pineapple cultivars to examine their chemical properties. Three pineapples such as cv. honey queen, cv. giant kew and cv. MD-2 were used as experimental materials. The study was conducted to evaluate pineapple cultivars for food quality attributes like shape and size, pH, vitamin C, vitamin A, titrable acidity, total sugars, reducing and non-reducing sugars, total carbohydrate, beta carotene, ash, moisture, fat, fiber, protein, Ca, P, Zn and Fe content. The pineapple cv. MD-2 had the best fiber content (0.17%), protein content (1.21%), vitamin C (47.07 mg/100 g), vitamin A (0.11 mg/100 g), beta carotene (0.07 mg/100 g), non reducing sugar (7.91%), Zn content (0.08 mg/100 g) and Fe content (0.51 mg/100 g) and had the lowest reducing sugar content (0.65%) and P content (3.87 mg/100 g). Pineapple cv. honey queen had highest total sugar (13.45%), Ca content (65.59 mg/100 g) and P content (7.05 mg/100 g) as well as lowest non reducing sugar (3.16%), fiber content (0.06%), vitamin C content (12.12 mg/100 g) and vitamin A content (0.09 mg/100 g). Pineapple cv. giant kew had highest percent of ash content (0.53%) as well as had lowest protein content (0.68%), total sugar (5.53%), Ca content (28.11 mg/100 g) and P content (0.29 mg/100 g). The highest total phenol (8.05 mg/100 g) and ferric reducing power (49.24 mg/100 g) were found in pineapple cv. MD-2. The lowest total phenol was found in pineapple cv. honey queen (6.10 mg/100 g) and cv. giant kew (6.91 mg/100 g) was in intermediate between cv. MD-2 and cv. honey queen. Pineapple cv. giant kew had the lowest total phenol (30.60 mg/100 g) content. On the basis of physical analysis, the highest ratio of edible part and peel of three pineapple cultivars was found in cv. MD-2 (2.01) and the lowest was found in cv. giant kew (1.76). Among three cultivars, mature cv. MD-2 was better having higher nutrients compared to cv. honey queen and cv. giant kew. Thus, pineapple cv. MD-2 can serve as a good source of nutrients for edible and processing. The present finding informs the comparative nutrient status and food values of three pineapple cultivars which might help to selection for consumption and processing in food industries.
