    Development of Carrot Powder Added Mozzarella Cheeses

    Cheese is one of the most delicate, subtle and fascinating foods in the world .Cheese is consisting of the coagulated, compressed and usually ripened curd of milk separation from the whey. Cheese is likely discovered by accident as a conservative method for fresh milk. During storage and transport of milk in a cow‘s stomach then existing rennet and agitation of the cow’s stomach turned the milk into curd and whey. The first written account of cheese date back about 2800 -3000 year .This dairy product has evolved into thousands of different types and varieties. Although most cheese is made from cow’s milk also sheep and goat’s milk are processed into chasse on a wide sale industrial basis .There are local varieties made from other types of milk. The flavor and texture of cheese depends on the type of milk used. Additional dried carrot powder added in this cheese. Carrot is common and popular vegetable in Bangladesh. It is also available whole year in local market. It rich in bio-active compound like carotenoid and dietary fibers with appreciable levels of several other functional components having significant health promoting properties. Carrot is an important source of natural antioxidant having anticancer activity. The experiment highlights the nutritional composition phytonutrient, health stimulating and carrot powder help product development.

    Quality Control Assurance & Production of Dairy Products At Dhaka Dairy Plant (Milk-vita)

    Bangladesh Milk Producers Co-operative Union Limited (BMPCUL) which is known as Milk-vita is a leading government organization for milk & milk products provider in Bangladesh. This report is prepared on my two-month practical experience at BMPCUL. This Internship program gives me lot of knowledge about milk and milk products practically. This report has been presented based on my observation and experience gathered from the company. The organization has many divisions and department but I got the opportunity to work in production department and quality control department. This report mentions about both raw and processed milk and milk products qualities and processing knowledge. Bangladesh Government & Bangladesh Milk Producers Co-operative Union Limited works together for this company. It ensure quality products for consumers. It promise to serve pure and quality products to the consumers. Bangladesh Milk Producers Co-operative Union Limited (BMPCUL) provide facilities for internship opportunity for students there. Major objective of this report is to identify quality milk and milk products. It also concern for developing the production and quality of dairy products. Customer’s choice are very important to Bangladesh Milk Producers Co-operative Union Limited (BMPCUL). My report is based on quality control and production of dairy products of BMPCUL. The first part of the report contains information of the organization itself. The second part of the report contains the raw milk test and quality parameters. The third part of the report contains production of dairy products. The last part contains the concluding part. This research’s result that found is much considerable.

    Vertical distributions of radionuclides along the tourist-attractive Marayon Tong Hill in the Bandarban district of Bangladesh

    This is the first attempt in the world to depict the vertical distribution of radionuclides in the soil samples along several heights (900 feet, 1550 feet, and 1650 feet) of Marayon Tong hill in the Chittagong Hill Tracts, Bandarban by HPGe gamma-ray spectrometry. The average activity concentrations of 232Th, 226Ra, and 40K were found to be 37.15 ± 3.76 Bqkg−1, 19.69 ± 2.15 Bqkg−1, and 347.82 ± 24.50 Bqkg−1, respectively, where in most cases, 232Th exceeded the world average value of 30 Bqkg−1. According to soil characterization, soils ranged from slightly acidic to moderately acidic, with low soluble salts. The radium equivalent activity, outdoor and indoor absorbed dose rate, external and internal hazard indices, external and internal effective dose rates, gamma level index, and excess lifetime cancer risk were evaluated and found to be below the recommended or world average values; but a measurable activity of 137Cs was found at soils collected from ground level and at an altitude of 1550 feet, which possibly arises from the nuclear fallout. The evaluation of cumulative radiation doses to the inhabitants via periodic measurement is recommended due to the elevated levels of 232Th.This pioneering work in mapping the vertical distribution of naturally occurring radioactive materials (NORMs) can be an essential factual baseline data for the scientific community that may be used to evaluate the variation in NORMs in the future, especially after the commissioning of the Rooppur Nuclear Power Plant in Bangladesh in 2024.
